New chef to open Hedgey’s at the Hirsel

Chef Steve Lyall will be opening his new bistro/restaurant at the Hirsel Golf Club in Coldstream on March 30.

It will be called ‘Hedgey’s at the Hirsel’.

Until recently, Steve was the Head Chef of the Collingwood Arms in Cornhill-on-Tweed.

Originally from Galashiels, he completed his chef’s training in the Borders and worked for several local hotels, including Burts in Melrose.

He moved to New Zealand in 1999 and stayed for 16 years forging a successful career working alongside some of the country’s top chefs. Steve was an Executive Chef in Wellington running a brigade of 30 chefs, in six venues, serving 2,000 covers a day!

It was in New Zealand that he met his partner, Susanne. They briefly moved to her home town of Frankfurt, before returning to the Borders. They now live in Kelso and recently had a baby boy together.

Steve brings a wealth of knowledge and culinary experience to his new restaurant.

He intends to be open daily between 11am and 8pm with a bistro-style menu. Once established, he plans more formal, fine dining options for the weekends.

In addition, different themed events throughout the year will ensure there is always a good reason to visit.

Steve’s arrival has been seen as a real coup for the club and Coldstream.

Hedgey’s at the Hirsel will be open to everyone, not just golfers.
